Red Currant Pie Recipe

This red currant pie is easy to make and you could use any kind of berries that you had around.

Ingredients

Crust

1/2 cup butter, melted
1 cup all purpose flour
1/2 teaspoon baking powder
2 Tablespoons brown sugar

Filling

6 cups red currants
1 cup granulated sugar
1 teaspoon ground cinnamon
2 teaspoons vanilla extract
2 tablespoons heavy cream
3 tablespoons arrowroot powder

Serves 8 - 10

Directions

Preheat oven to 400F.

Crust

Mix together melted butter, flour, baking powder and sugar, until a dough has formed. Press into a 9 x 13 baking dish, and bake for 10 minutes.

Reduce heat in oven to 350F.

Filling

In a medium sized pot add currants, sugar, cinnamon, vanilla, and arrowroot. Cook over medium - low heat for 20 minutes, stirring constantly. Pour on top of baked crust.

Bake for another 30 minutes. Let cool and serve.
