Cranberry Oat Muffins Recipe

A moist and tender cranberry muffin recipe that is a great use of that leftover cranberry sauce.


1 cup white flour
1/2 cup whole wheat flour
1 cup quick cooking rolled oats
1 1/2 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
1/4 cup walnuts, chopped
2 eggs
1/4 cup oil
1/2 cup orange juice
2 cups cranberry sauce


Preheat oven to 350F.

Combine flour, rolled oats, baking powder, baking soda, salt and walnuts.

Whisk together remaining wet ingredients in a new bowl, and then add to dry ingredients.

Mix together until combined.

Fill greased or lined muffin tins 3/4 full.

Bake 15-20 minutes.
